Chicken and Rice Salad (Good for Diets)

what you need
  • 2 cups unsalted rice, cooked & cooled
  • 2 cups chopped cooked skinless chicken
  • 1 can low sodium peas, drained
  • 1 cup chopped celery
  • 1 cup green pepper, chopped
  • 2 Tbsp. finely chopped onion
  • 3/4 cup low sodium mayonnaise
  • 1/2 tsp. pepper
  • 2 Tbsp. lemon juice
  • 2 Tbsp. chopped parsley
make it
1. Combine rice, chicken, peas, celery, green pepper, and onion.

2. Combine remaining ingredients and toss with chicken mixture.

3. Chill well before serving.
