Chicken and Shroom Cheesy Wild Rice Soup

what you need
  • 3 boneless skinless chicken breasts
  • Salt, pepper and garlic
  • 2 small-medium carrots, cut to match sticks
  • 1 box Uncle Ben's Wild Rice Original
  • 1 can family size cream of mushroom soup
  • 2 cups partially frozen broccoli florets, cutting large pieces smaller
  • 2 cups Kraft Shredded Sharp Cheddar Cheese
  • 1 soup can full milk
make it
Place chicken in large pot adding enough water to cover. Season with salt and pepper and garlic. Bring to a low boil, reduce to a simmer, cover and cook for 30-45 minutes. When chicken is done remove from water, set aside to cool.

Add carrots to the water and bring to a boil, add season packet and rice, follow package directions but using all of the liquid in the pot. Meanwhile chop chicken into small bite size pieces.

When rice is tender add mushroom soup stirring till all lumps are gone. Add the broccoli, chicken and cheese and one soup can of milk. Simmer, stirring frequently till heated through and cheese is melted.
Notes
Do not allow to boil after adding the milk as it could scorch. Great served with fried garlic toast or grilled cheese.
