Chicken Tender Enchilada Casserole

what you need
  • 1 tsp. olive oil
  • 1 tsp. minced garlic
  • 1 lb. chicken tenders
  • 16 oz. sour cream
  • 1 can cream of chicken soup
  • 1 small can diced green chilies
  • 1 small can chopped olives
  • 16 flour tortillas
  • 20 oz. grated jack cheese
  • Paprika
  • Green onions

Preheat oven to 350°F. In a skillet put olive oil and garlic, over med. heat. Cook garlic for about three minutes. Add chicken and cook thoroughly. In a med bowl mix sour cream, soup, green chilies and olives.

Take tortillas, put chicken and 1 Tbsp. of cheese and 1 Tbsp. of sour cream mixture in, and roll. Secure in baking dish. Continue with all tortillas and pack tightly in dish. Pour all sour cream mixture over tortillas. Sprinkle grated cheese over top. Sprinkle with paprika.

Bake for 20 minutes. Put chopped green onions over top and enjoy!
This is a favorite among everyone I know. I am always asked to make it for potlucks or when people are coming over.

People constantly ask for the recipe, so I thought why not share it with everyone! Hope you like it!

Rated  by a cook on 12/4/2007 This is so creamy and the flavor is wonderful! If you like creamy saucy things, this is it. For people who like casseroles that are less creamy you may want to omit some of the sour cream. Overall we loved it!!!
