Chicken Tortilla Soup

what you need
  • 1 can black beans, drained & rinsed
  • 1/2 can dark red kidney beans, drained & rinsed
  • 1 can diced tomatoes with green chilies, don’t drain
  • 1 can diced tomatoes, don’t drain
  • 1 can whole kernel corn or Mexican corn, don’t drain
  • 1 pound chicken breast, cook in micro, cut into bite size pieces
  • 1 pound mild Mexican Velveeta, not shredded type, slice it so it melts faster
  • 1 Tbsp. or more of Taco Seasoning mix
make it
Combine all ingredients.

Place in crock-pot.

Cook on High for about 2-3 hours.
