Chipotle Cheese Dip

what you need
  • 1 pound Velveeta
  • 1 can (7 oz.) chipotle peppers in adobo sauce
  • 1 can (10 oz.) diced tomatoes & green chilies
  • 1 bag (20 oz.) 100% white corn, plain tortilla chips
make it
Cut Velveeta into small cubes and place in large microwaveable casserole dish. Pour the chipotle chilies in adobo sauce and the diced tomatoes and green chilies into microwaveable casserole dish.

Cover, microwave 5 minutes on high, stir, continue to heat and stir at 5 minute intervals until melted.

When completely melted serve with 100% white corn chips. Fantastic basic dip recipe has many easy variations.
VARIATIONS: Add cooked ground beefand/ or sausage, canned black beans, 4 oz. can fire roasted, peeled and diced green chilies or other fresh or canned mild or hot chilis to taste.

An especially good addition is a 15 oz. can of spicy chili beans. The more meat and beans added convert this easy dip to a main entree.
