what you need
- 1/3 cup Masa Harina
- 1 Tbsp. ground cumin
- 1/4 tsp. salt
- 2 1/2 lb. boneless beef stew meat, cut into 1/2 inch cubes
- 4 garlic cloves, pressed
- 2 cups coarsely chopped onion
- 1 cup diced green bell pepper
- 2 Tbsp. chopped canned chipotle chiles + 1 Tbsp. Adobo Sauce
- 3 cans (14 1/2 oz. each) diced tomatoes with green chiles, undrained
- 1 can (14 1/2 oz.) beef broth
- 1 Tbsp. brown sugar
make it
Mix together masa harina, cumin and salt. Toss with meat till evenly coated. Press garlic over meat.
Coarsely chop onion. Dice green pepper & finely chop chipotle chiles. Add onions, bell pepper, chiles, adobo sauce, tomatoes broth and brown sugar to meat mixture, mix well.
Cover with lid and cook 2 hours or until meat is tender. Stir occasionally.
Notes
Can substitute all purpose flour for masa harina.
