what you need
- Citrus Chicken:
- 2 lb. boneless skinless chicken breasts
- Extra virgin olive oil
- 1 cup basil, divided
- 1 lemon, divided
- 1 lime, divided
- Bruschetta:
- 1 loaf French bread
- 1 large plum tomato
- 1/2 cup basil
- 1 clove garlic, minced
- 1/2 cup mozzarella cheese

Citrus Chicken:
Cut chicken into bite size slices. Cover the bottom of a medium skillet with extra virgin olive oil. Pour half of basil into bottom of skillet and squeeze half of the lemon and lime into the skillet. Then place the chicken into the skillet and top with the rest of the basil, lemon juice, and lime juice. Zest the lime and lemon onto the chicken if desired.
Cook chicken until cooked through (no pink color when you cut the chicken).
Bruschetta:
Preheat oven to 375 degrees F. Cut the bread into quarter-inch slices. Slice up the tomato, basil, and garlic. Cover each slice of bread with tomato and basil mixture. Cover each with mozzarella cheese. Bake for 10-15 minutes, until bread is crispy.
Notes
If desired put chicken over pasta. Also you could put a piece of chicken on top of each piece of Bruschetta.
