Clark's Enchilada Casserole

what you need
  • 1 large onion, chopped
  • 1 lb. ground beef
  • 1 can tomato paste
  • 1 can enchilada sauce (mild) plus 1/2 can water
  • 2 cans pinto beans
  • 9 corn tortillas
  • 1 lb. block Kraft Sharp Cheddar Cheese, thinly sliced
make it
Preheat oven at 325°F. Brown onion and ground beef in large skillet. Add tomato paste, enchilada sauce and water. Then add pinto beans.

Place a layer of this mixture in a greased 2 quart baking dish. Cover with 3 tortillas and a layer of sliced cheese. Add another layer of mixture, 3 tortillas and sliced cheese. Continue alternating layers. Top with cheese.

Bake 1 hour.
