- Vegetable oil for frying
- 3/4 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon ground cayenne pepper
- 1/4 teaspoon garlic powder
- 4 (4-ounce) American Pride catfish fillets

Fill a Dutch oven or a deep fryer half full with vegetable oil. Heat oil to 350°F.
In a shallow bowl, combine cornmeal, flour, salt, cayenne pepper, and garlic powder. Coat catfish fillets with mixture, shaking off excess.
Fry catfish in a single layer for 5 to 6 minutes, or until golden brown, turning several times. Remove and drain on paper towels.
