Coconut Custard Mochi

what you need
  • 1 box mochiko rice flour
  • 2 cup sugar
  • 3 eggs
  • 1 tsp. baking powder
  • 1 can evaporated milk (add water to equal 2 cups)
  • 1 can coconut milk (add water to equal 2 cups)
  • 1 tsp. vanilla extract
  • 1/2 pkg. Baker's Angel Flake Coconut

Mix ALL ingredients together except coconut flakes, and mix well with mixer.

Grease and flour 9x13 baking pan and pour in mixture. Then sprinkle over coconut flakes.

Bake 1 hour at 350°F.
Notes
This makes a great dessert for parties and entertaining, when you need something really good, but don't have a lot of time to prepare. I like it best served warm, some like it completely cooled. ENJOY!
