Coconut Custard Pie

what you need
  • 4 eggs
  • 1 1/2 cups sugar
  • 2 tsp. cornstarch
  • 1/2 cup melted butter
  • 1 can evaporated milk
  • 1 tsp. vanilla extract
  • 1 pkg. flaked coconut
  • 2 unbaked (9 inch) pie crusts
make it
In a large bowl blend eggs, sugar and cornstarch until smooth. Add melted butter, milk and vanilla, mix well. Stir in some coconut (save some coconut flakes for topping).

Divide filling into pie shells.

Bake at 350 degrees F for 35 - 45 minutes or until firm.
Notes
When pie is firm enough, sprinkle coconut flakes onto top of pie and let brown.
