Copycat Olive Garden Zuppa Toscana

what you need
  • 1 lb. Italian sausage (Jimmy Dean)
  • 1 small onion or shallot
  • 1 container (48 oz.) Swanson chicken broth
  • 1 tsp. minced garlic or 2 cloves minced garlic
  • 1/2 bag potatoes or 3 large Yukon gold or Russet potatoes, sliced in 1/4" rounds
  • 1/4 cup Oscar Mayer Real Bacon Bits
  • 1 to 2 cups roughly chopped kale
  • 1 cup Land O Lakes fat free half-and-half
make it
Brown sausage and onions.

Add broth, garlic and potatoes. Bring to boil then reduce to medium for 15 minutes.

Add bacon bits and continue cooking 5 minutes. Add kale and half-and-half and heat through (less than 5 minutes). Serve with fresh, hot bread!
You can also use frozen kale. It can go straight from the freezer to the pot!
