Corn Pancakes

what you need
  • 1 can sweet corn
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp. salt
  • 1/3 cup cilantro (chopped)
  • 1/4 cup oil (for frying)
make it
1. Drain the corn. Blend the corn in blender or food processor.

2. In a separate container, mix cheese, salt and cilantro and add the corn to the mix.

3. Add oil to a pan in medium heat. Once the oil is hot, add a 1/3 cup of the mixture to the pan and fry. Flip when ready. Cooked side will be golden.
Serve over white rice or by itself.
