Crabby Cheese Stuffed Chicken

what you need
  • 1-1 & 1/4 cup water (depending on how thick you want the cheese sauce), divided
  • 5 boneless chicken breast halves
  • 1/4 cup finely chopped broccoli
  • 1 package (4.5 oz.) dry cheese sauce mix
  • 6-8 ounces crabmeat, drained & flaked
  • 1 Tbsp. seasoned salt
  • A dash of red pepper

Preheat oven to 350 degrees F. On stovetop, heat up 3/4 cup of water, bring to a boil. Meanwhile you can cut off the fat of the chicken if needed and chop up broccoli very finely. When water comes to a boil, add the cheese sauce mix, turn off stovetop, then add 1/4 cup of cool water and mix well.

Next, add in the crabmeat, chopped broccoli, seasoned salt, and red pepper. Simmer on a very low heat for about 2 min. stirring constantly. Turn off stovetop and let sit for about a minute or two.

Lay out your chicken breasts on the wax paper, and as if making a jelly roll, spread the crab cheese mixture on all five breasts. Then roll up the individual breasts carefully (as some of the mixture may come out. If you want you can also use toothpicks to seal off the ends.) and quickly wrap tight individually in the wax paper followed by the aluminum foil. This allows the chicken to stay tender and juicy throughout cooking time.

Lay out all 5 wrapped breasts on a cookie sheet and cook for 1 hr - 1 hr 30 min, depending on thickness.
You will also need wax paper and aluminum foil or toothpicks and aluminum foil.

TIP: After the chicken has been cooking for 45 min. it will be easy to open up the wax paper, aluminum foil without stuffed chicken coming undone to check how well the chicken is cooking. Also total time for prep. cooking, and everything else should generally take 1 hr. 20 min.-1 hr. 50 min.

Good to make over rice, especially yellow rice.
