Cranberry Buffalo Chip Cookies

what you need
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 4 sticks butter, softened
  • 2 cups brown sugar
  • 2 cups granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 cups oatmeal
  • 2 cups Post Selects Cranberry Almond Crunch Cereal
  • 2 cups white chocolate chips
  • 1/2 cup silvered almonds
  • 1 cup Craisins
  • 1 cup coconut

Preheat oven to 350 degrees F. With an electric mixer, beat eggs and extract; add the butter and sugars, mixing until creamy. Add the dry ingredients, mixing well. Add the oatmeal and cereal. Continuing using the electric mixer, stir in the chips, almonds, Craisins and coconut.

Use an ice cream scoop, drop dough onto ungreased cookie sheets, 2 inches apart. 6 cookies will fit on each sheet.

Bake 20-25 minutes until lightly browned.
