Cranberry Oatmeal Cookies

what you need
  • 10 tablespoons butter
  • 2/3 cups packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 2/3 cups whole wheat flour
  • 1/2 tablespoon baking soda
  • 1 pinch salt
  • 1 cup rolled oats
  • 3/4 cups chopped walnuts
  • 2 cups chopped cranberries
make it
Preheat the oven to 350F. Blend butter and sugar until fluffy. Add eggs and vanilla. Mix well.

In a separate bowl sift flour, baking soda, and salt together. Stir into butter mixture until well mixed. Stir in oats. Fold in nuts and cranberries.

Place dollops on cookie sheet, and keep them spread apart. This cookie spreads. Bake until they fall back down (8-10 minutes). Cool and enjoy.

Rated  by conmor on 10/4/2009 Ok today's rating regards the cookie the next day. If you store them in a airtight container they get very wet and stick together. My husband tried one and didn't like the flavor.
