Crock-Pot Chicken Stew

what you need
  • 1 medium onion
  • 3-4 boneless chicken breasts
  • 1 bag frozen mixed vegetables (carrots, peas, corn and green beans)
  • 1 cup water, divided
  • 1 Tbsp. garlic powder
  • Salt and pepper to taste
  • 1 Tbsp. flour

Chop onion and put in crock-pot along with chicken and mixed vegetables. Fill crock-pot with water just covering ingredients. Add seasonings.

Set to low for 8 hours recommended (4-5 on high if you are in a hurry).

In last 30 minutes to an hour take chicken out, chop and place back in crock-pot. Also, mix flour and cup of water and try to make sure all lumps are gone. Pour mixture into crock-pot and stir. Finish cooking time.
Notes
Add about 3-4 raw peeled chopped potatoes if you do not want to add the thickening solution.
Best if served with homemade biscuits ;)
