Crunchy Chicken & Rice Casserole

what you need
  • 1 cup chopped celery
  • 1 tablespoon butter
  • 2 cups cubed cooked chicken
  • 1 1/2 cups cooked rice
  • 1 can cream of chicken soup
  • 3/4 cup mayo
  • 1 can sliced water chestnuts, drained
  • Salt and pepper to taste
  • Topping:
  • 1 tablespoon butter, melted
  • 1/2 cup crushed corn flakes
make it
1. In a skillet, saute celery in butter until tender. Remove from heat; add the next seven ingredients. Spoon into ungreased 2 1/2 qt. baking dish.

2. Combine melted butter and cornflakes; sprinkle on top of casserole.

3. Bake, uncovered, at 350 degrees F for 30 minutes.
Notes
You can add slivered almonds to the topping, before baking.
