Crunchy, Creamy Squash and Stuffing Casserole

what you need
  • 3 cups sliced unpeeled yellow squash
  • 1/2 cup melted butter
  • 1 box Stove Top Whole Wheat Stuffing Mix or homemade equivalent
  • 2 medium carrots, shredded
  • 1 can (14 oz.) cream of chicken soup, undiluted
  • 1 small onion, diced
  • 1 small jar pimentos, diced
  • 1 cup sour cream
make it
Lightly cook the squash and drain well. Meanwhile mix the butter and stuffing together until blended. Mix all remaining ingredients, add half the stuffing.

Pour into a greased 9x13 pan. Top with remaining stuffing and small dots of extra butter (optional).

Bake at 350°F for 25-30 minutes, or until lightly browned and bubbly.
