what you need
- Cooked, boneless chicken, cut up into bite-sized pieces
- 1 cup fat free or light mayonnaise
- 1 tsp. curry powder
- 1 Tbsp. lemon juice
- Raw broccoli, cut in pieces
- 1 cup shredded cheese
- 1/2 cup dried bread crumbs
- 1 Tbsp. butter

Cook chicken thoroughly and cut into pieces, put aside. Mix together mayonnaise, curry powder, and lemon juice. Preheat oven to 350 degrees. Spray 9x9 glass baking pan with nonstick spray.
Spread chicken in prepared pan. Layer broccoli over chicken. Layer the mayonnaise mix over the broccoli. Try and seal the mayonnaise totally over the ingredients below. Layer the cheese over the mayonnaise. Melt the butter in a frying pan and mix with the bread crumbs in order to toast them. Layer this over the cheese.
Cook uncovered for 45 minutes. You can make this up ahead of time, sealing the pan with plastic wrap, and place in the refrigerator a day ahead of time before baking. The flavors mix more this way and it even tastes better.
Notes
Double the mayonnaise, curry powder, and lemon juice if using a 9x13 glass pan.
