what you need
- 1-1/4 cups all purpose flour
- 2 tsp. baking powder
- 1/8 tsp. salt
- 1 large egg
- 3/4 cup milk
- Vegetable oil for frying
- 20-25 cream filled chocolate sandwich cookies
- Confectioner’s sugar for garnish
make it
Combine flour, baking powder & salt together in large bowl. In small bowl, combine egg & milk, whisk. Combine milk & flour mixture, stirring just until blended.
In a medium, heavy-bottomed sauce pan, add enough oil to come 1/3 of the way up the sides of the pan, or about 1-1/2" deep. Heat oil to 360-degrees F.
Dip cookies in batter & carefully place in hot oil....might want to use a slotted spoon for safety. Fry until batter is golden, about 2 minutes, and carefully turn cookies over & fry approximately 1 minute more.
Remove & place on paper towel-lined plate. Dust with confectioners' sugar and serve immediately.
Notes
These taste like chocolate filled funnel cakes, the cookies become soft inside.
