Dirty Rice for Jeff

what you need
  • 1 lb. boudin Sausage
  • 1 1/2 to 2 cups dry brown/white rice
  • Mix of wet ingredients: boudin drippings, water, stock to make 2:1 ratio wet/rice
  • 1 cup diced onion
  • 3/4 cup diced green pepper
  • 1 can diced green chiles or 1 fresh jalapeno with ribs/seeds removed
  • Tabasco to taste
  • File seasoning (prefer no salt version--or Cajun seasoning)
  • Kosher salt and pepper if needed
make it
Remove sausage from casings and brown. Make small ground as this is what creates the "dirty" look. Use some of drippings, but drain excess.

Combine all ingredients and cook until rice has absorbed all liquid. I use electric rice cooker.
To make heart smart use brown rice, or regular, white rice; 1/4 cup dry per person.

I cook for good taste, but try to keep in mind heart health and low cholesterol and low calorie. Shredded carrots could be added for additional fiber and vegetables as well as small diced zucchini.
