Easiest Chile Relleno Casserole

what you need
  • 2 sm cans whole green chiles
  • 1 lb. shredded jack cheese
  • 1 lb. shredded cheddar cheese
  • 8 eggs
  • 1 can (12 oz.) milk
make it
Preheat oven to 325 degrees F. Split whole chilies lengthwise and put in bottom of 13X9 pan. Cover with cheese, then chilies, and cheese again.

Beat eggs with milk, and pour over chili cheese mixture.

Bake 45 minutes or till brown around edges.
This is a very forgiving recipe. You may use whole chilies or diced, or half and half.

You can add a couple more eggs if you have to feed more people.

Super easy to make and great the next day!

Serve with fruit compote.
