Easy Bake Boneless Chicken and Sauce

what you need
  • 1 pkg. boneless chicken breast
  • Salt & pepper
  • 1 can diced tomatoes and green chilies
  • 1/2 small white onion, chopped or diced
  • Basil
  • Parsley
  • 1 small can tomato sauce
  • 1 tsp. minced garlic
  • Olive oil
  • Low fat, no trans fat butter
  • Grated or shredded cheese: four cheese or cheddar

Wash chicken and slice longways to make thinner. Lay in single layer on platter or plate and salt & pepper both sides lightly. Set aside. In blender, use chop setting for 3 to 5 seconds to mix can diced tomatoes and chilies, chopped or diced onion, basil, parsley, tomato sauce, and minced garlic. Should be a chunky sauce, not smooth. Set aside.

In skillet, brush with thin layer of olive oil. Heat on low heat for 5 minutes. Place thin slices of boneless chicken breast in skillet and sear each side on medium-low heat for approximately 6 minutes. Remove from skillet and set aside.

Preheat oven to 450 degrees. Use low fat, no trans fat butter to coat a baking pan sized to fit all of thin sliced chicken breasts. Single layer the cooked chicken breasts. Pour blended, chopped topping sauce over the top of the chicken. Sprinkle grated/shredded cheese over top of sauce.

Bake approximately 25 minutes. Remove from oven and sprinkle more shredded cheese in thin layer over top.
Notes
Chicken should be thoroughly washed and kept separate from other dishes while raw. Please wash hands and all dishes, utensils, and disinfect counters that come in contact with raw chicken. Add additional cooking/baking time if chicken is not thoroughly cooked.
