Easy Beef Enchiladas

what you need
  • 1 lb ground beef
  • 1 lg. can enchilada sauce (green or red), divided
  • 4 oz. cream cheese
  • 1 sm. can diced chilies
  • 1 sm. can chopped olives
  • 8 flour tortillas
  • 1 bag shredded Mexican cheese
make it
Preheat oven to 350. Brown beef. Add 1/3 enchilada sauce, cream cheese, chilies, and olives to beef, stir until smooth and remove from heat.

Spoon 1/8 beef mixture into tortilla, add some cheese, roll and place in casserole dish. Repeat for all 8 tortillas. Top enchiladas with remaining sauce and cheese.

Bake for 30 minutes (or until cheese starts to crisp).
