Easy, Cheesy, Meatloaf Cupcakes

what you need
- 1 1/2 lb. ground beef
- 1 box uncooked Stove Top Stuffing
- Optional - 1/2 small onion and 1/2 small green pepper, chopped; 1 cup of corn or peas
- 1 cup Kraft Barbeque Sauce, divided
- 1 package Kraft Cubed Cheddar (or other) Cheese
- 2 eggs

Mix 1/2 of the barbeque sauce with all other ingredients except cheese.
Fill muffin or popover tins 1/2 full with meat mixture. Add one or two cubes of cheese and fill with remaining mixture. "Frost" with remaining barbeque sauce.
Cook for 25-30 minutes at 350°F.
Notes
My kids love the cheesy surprise in the middle of this recipe and I never have trouble getting them to eat their meatloaf!
