Easy Chinese Chicken with Rice and Vegetables

what you need
  • 1 1/3 - 2 1/3 cups water
  • 1 teaspoon salt
  • 1/2 tablespoon butter or margarine
  • 1/2 - 1 cup white rice
  • 1 - 2 chicken breasts
  • 1/2 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon seasoning or garlic salt
  • 1/2 teaspoon crushed red pepper
  • 12 oz. package Asian vegetables (sold in freezer section) *see notes for fresh vegetables
  • Soy sauce or other favorite Chinese sauce to taste

Boil 1 - 2 cups of water (pending amount of rice) with salt and butter and cook rice for 10 minutes or when tender. Or follow your rice's own cooking directions.

Cut chicken breasts into small to medium cubes (depending on preference) and cook with olive oil on skillet. Add pepper, seasoning or garlic salt, and red pepper to chicken.

Place vegetables into an adequate sized saucepan with 1/3 cup of water and cook on a low setting for 5-7 minutes stirring frequently. Instructions are also on package

When rice, chicken, and vegetables are all cooked combine and stir ingredients into the vegetables saucepan. Place lid on saucepan to allow 2-3 of steaming. Add soy sauce or other Asian sauce to liking.
Chicken, rice, and vegetables should be cooked at the same time to ensure timeliness. Spices are not required but it does add great flavor so use them if you have them.

The frozen Asian vegetables contain a great marinade that tastes excellent. *If you want to use fresh vegetables, the package includes broccoli, carrots, green beans, sugar snap peas, celery, and red peppers. But for ease and price the frozen package is great. Add more of listed ingredients if making larger servings. Could be made with any meat or without meat!
