Easy Mexican Casserole

what you need
  • 1 lb. ground beef
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes and green chilies
  • 1 can ranch style beans
  • Corn tortilla chips
  • Shredded cheddar cheese
make it
Brown ground beef and drain. Add cream of mushroom soup, diced tomatoes and green chilies (do not drain juice) and ranch style beans. Mix well. Simmer 10-15 min, stirring occasionally.

While ground beef mixture is simmering, preheat oven to 375 degrees F. In a 9x13 inch baking dish, cover bottom with broken tortilla chips. Pour ground beef mixture over tortilla chips. Top with more tortilla chips and shredded cheddar cheese.

Bake until cheese is melted, about 10 minutes.
This is a quick and easy recipe and everyone loves it!

Rated  by brichappy on 9/26/2012 MODIFIED - Made this recipe with some changes. I decided NOT to use the cream of mushroom soup, otherwise I followed the recipe as described. I provided several toppings so each family member could add what suited their taste buds. Toppings included; salsa, sour cream, shredded cheese, sliced jalapeño, hot sauce. It was very good and everyone liked it. Very easy to make and it will definitely be added to my list of meals. Enjoy........
