Easy Nacho Skillet Dinner

what you need
  • 1 lb. ground beef
  • 2 cups frozen corn
  • 2 teaspoon chili powder
  • 1 can (15 1/2 oz.) kidney beans, rinsed and drained
  • 1 can (15 oz.) tomato sauce
  • 2 cups slightly broken tortilla chips
  • 1 cup (4 oz.) shredded cheddar cheese
make it
Brown ground beef in a 10-inch skillet; drain. Stir in corn, chili powder, beans and tomato sauce.

Simmer uncovered 10 minutes, stirring occasionally.

Sprinkle with tortilla chips and cheese. Cover; heat about 2 minutes or until cheese is melted.

Rated  by fgunn on 5/19/2006 This was fast and easy and tasted great. I did make a few changes I used salsa instead of tomato sauce, canned corn instead of frozen and kraft mexican shredded cheese. We topped it with sour cream and next time i will put the chips on the side they get to soggy when they are mixed in.
