Easy Pineapple Chicken

what you need
  • 1 large can pineapple rings, reserve the juice
  • 2 Tbsp. light brown sugar
  • 1 Tbsp. garlic powder
  • 2 teaspoons white wine vinegar
  • 6-8 boneless skinless chicken breasts
  • Salt and pepper to taste
  • Dried mint flakes

Preheat oven to 375°F. Combine pineapple juice, brown sugar, garlic, & vinegar in a saucepan and bring to a boil, stirring occasionally. Remove from heat and allow to cool.

Clean chicken, season with salt and pepper, and place in a rectangular baking dish greased with a drizzle of olive oil. Pour juice mixture over the chicken. Cut pineapple rings into pieces and put in dish over the chicken. Sprinkle mint flakes over the chicken.

Bake chicken in oven for 40 minutes, or until juice from chicken runs clear and chicken is no longer pink inside. (Check occasionally basting chicken with the juice from the bottom of the dish). Remove chicken from the oven and let sit 5 minutes (covered with foil) prior to serving.
Notes
I came up with this recipe one evening when my cupboards were basically bare! My boyfriend absolutely loved it, so now it has become a standard. This is a meal that does not require too much effort, but tastes like it does. Every time I serve it, it reminds me of Hawaii, even in the dead of winter!
