Easy Pineapple Upside Down Cake

what you need
- 4 Tbsp. butter
- 1/2 cup packed brown sugar
- 1 can (20 oz.) pineapple rings, DO NOT DRAIN
- 6-12 marachino cherries
- 3 eggs
- 1 box yellow cake mix
- 1/3 cup vegetable oil
- Ice cream or Cool Whip (optional)

Melt butter in a 13x9-inch pan while the oven is preheating to 350 degrees F. Once melted carefully take out and sprinkle brown sugar in bottom of pan in the butter. Arrange six pineapple rings and cherries and put them in the butter mixture.
Take the rest of the pineapples and JUICE and chop them in a hand chopper or with a knife. In a bowl, mix eggs, cake mix, oil and mashed pineapple and juice with a mixer for 2 minutes. Pour over top of pineapples in pan.
Bake for 45 - 50 minutes. Cool for about 5 to 10 minutes then flip onto a platter. Top with ice cream or Cool Whip if you like.
