Easy Pork Roast

what you need
  • 1-2 lb. pork loin roast
  • 1/2 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. parsley
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. herbs de provence
  • 1 tsp. salt
  • 1 tsp. pepper

Preheat oven to 350 degrees F. Place pork roast in a 13" x 9" pan.

Combine the rest of the ingredients in a jar with tight fitting lid and shake well. Pour over roast.

Bake for 45 min, turn roast over and bake for 45 more minutes. Let stand for 5 minutes before slicing.
Notes
We serve this with a green salad and roasted potatoes.

Rated  by a cook on 1/6/2010 This was very easy and the pork was very tender and moist. The only thing I would change would be to decrease the amount of salt, perhaps by half as much. Also, I did not have herbs de provence, so I just used crushed basil and thyme instead and it turned out great. A one-pound roast is not that big, so if you are feeding more than 3 or 4 adults you would need more than one roast.
