Easy Santa Fe Lasagna

what you need
  • 1 Tbsp. olive oil
  • 1 small onion, chopped
  • 1/3 cup green pepper, chopped
  • 1 cup leftover or rotisserie chicken, diced
  • 1/3 lb. smoked chorizo sausage, diced
  • 1 pkg. (8 oz.) Kraft Santa Fe Blend Cooking Creme, divided
  • 1 pkg. (8 oz.) Inn Maid Noodles
  • 1/2 cup sour cream
  • 8 oz. sliced pepper jack cheese
  • 1/2 cup chopped fresh cilantro

Preheat oven to 350 degrees F. Saute onion, and pepper in oil till tender. Add chicken and sausage and warm through. Pour all but 1/4 cup Santa Fe Blend into vegetable mixture. Heat through.

Meanwhile, cook noodles in well salted water until just al dente. Drain, reserving 1/2 cup cooking liquid. Mix 1/4 cup Santa Fe Blend into the noodles. Pour reserved liquid into vegetable mixture.

Spray 11x7 inch baking pan with cooking spray. Spread 1/3 of veggie sauce on bottom of pan. Add half the noodles. Spread sour cream over hot noodles, top with half of the vegetable mixture, another layer of noodles and rest of vegetable sauce. Top with pepper jack slices.

Cover and bake 35-40 minutes till bubbly. Remove foil and bake an additional 5 minutes till slightly brown. Remove from oven and allow to rest 5-10 minutes. Top with chopped fresh cilantro. Serve.
Notes
I recently threw this together for a Church pot luck. It was a huge hit and several people there said I should publish it. It's one of my recipes I will make again and again.

Note: Regular smoked sausage should work beautifully in this recipe as well.
