Easy Smothered Chicken

what you need
  • 6 small boneless, skinless chicken breasts
  • 1 can chicken broth
  • 4 ounce can Green Giant sliced mushrooms
  • 1/2 cup sliced green, red or yellow peppers
  • 1/4 cup sliced onion
  • 3/4 cup Kraft Shredded Cheese, Colby/Cheddar blend

In a saucepan, pour the broth over the chicken breasts. Heat until simmering, about 15 minutes. Leave uncovered to reduce the broth. Turn chicken over after 10 minutes. Then cover and cook thoroughly 5-7 minutes.

Uncover and add mushrooms, peppers, and onions. Recover and cook vegetables through another 5 minutes.

Turn off heat, uncover, and arrange the onions and peppers on top of each chicken breast. Sprinkle cheese generously over each breast. Cover and let stand until cheese is melted. Serve over rice or noodles (or more vegetables).
Notes
Kids love participating in this recipe. I let them put the veggies and cheese on top! I sometimes add extra peppers and mushrooms! My kids love the vegetables in this recipe.
