Easy Vegetable Beef Soup

what you need
  • 1 lb. ground beef
  • 1 large can V-8
  • 2 cups water
  • 4-6 potatoes
  • 1 can each: corn, green beans, peas, carrots
  • 1/4 cup barley (optional)
  • 2 cups chopped cabbage (optional)
  • Salt & pepper
make it
Brown meat, rinse and drain. Add V-8 and water.

Peel potatoes and cut into 1 inch chunks and add. Add drained canned vegetables, barley and cabbage. Salt and pepper to taste.

Simmer for 40 minutes or until potatoes are tender. Serve with corn muffins or rolls. Perfect for a chilly afternoon!
Notes
You can adjust the recipe depending on the size you are cooking for. I usually make this in a very large pot, it gets better the next day. It really hits the spot!
