Edamame with Mustard Vinaigrette

what you need
- 1 1/2 Tbsp. red wine vinegar
- 1 Tbsp. Dijon mustard
- 1/2 tsp. sea salt
- 1 tsp. olive oil
- 1 lb. frozen, shelled edamame, thawed
- 1 cup thinly sliced red onion
- 1/2 cup chopped celery
- 1 Tbsp. chopped parsley
make it
Combine first three ingredients, stir with whisk and whisk in oil slowly.
Cook edamame in boiling water about 4 minutes. Add onion and celery. Cook 1 more minute. Drain well.
Add mixture to vinaigrette and mix well. Stir in parsley then chill for 1 hour before serving.
Notes
Good as a snack, side dish or salad. Perfect for potluck!
