what you need
  • Omelets:
  • 1 bunch scallions, with tops
  • 1 can bean sprouts
  • 1 cup diced shrimp or any other leftover meat (Mom used Spam)
  • 2 tablespoons soy sauce
  • 6 eggs
  • Sauce:
  • 1 can consomme
  • 1/2 cup diced onions
  • 1/2 cup diced celery
  • 6 tablespoons soy sauce
  • Salt and pepper to taste
  • 1 tablespoon cornstarch

To make the omelets, cut up scallions (including tops), and saute with bean sprouts and meat of your choice, stir in soy sauce and the remove from heat.

Beat eggs and add to meat mixture. Fry into small omelets, set aside.

To make Sauce--- Simmer broth with onions, celery, soy sauce, salt and pepper. Thicken with cornstarch and pour over omelets.
