what you need
  • 1 red onion
  • 1 tomato
  • Parsley
  • 1 tsp. salt
  • 1 tsp. pepper
  • 5 eggs
  • 1/4 cup milk
  • 6 flour tortillas
  • 1 Tbsp. butter/oil
  • 3-4 Tbsp. tomato ketchup
  • Grated cheese of your choice (optional)

First cut onion and tomato into small dices. To this add finely chopped parsley, salt and pepper and put this veggie mixture aside. In a bowl, beat the eggs and milk together.

Heat a small nonstick pan (a pan approximately equal to the size of tortilla) and make an omelet. When once side is done turn it to the other side also and cook for about a minute.

Put another pan on the stove and heat it. Take a tortilla and brush little of oil on both sides and slightly fry it. Don't do too much such that, it becomes hard. Now once it is done take it out and spread some ketchup on it and put the cooked omelet. Spread some cheese and veggies. Roll it and insert a toothpick to put it together and serve it.
Notes
You can add grated carrots, spinach, cabbage, beans, or any other veggie of your choice. Just one roll will make your breakfast or brunch.
