Egg-White Scramble and Smoothie

what you need
  • 1 slice multi-grain bread
  • 2 egg whites
  • 1 Tbsp. Dijon mustard
  • Salt and pepper to taste
  • 1 banana
  • 2 cups strawberries
  • 1/2 cup soy milk
make it
Preheat a small skillet. Pop bread in toaster. To separate the egg whites, crack eggs over a bowl and toss the yolk between the shell halves until all of the whites fall in to the bowl. Discard yolks.

Coat skillet with cooking spray and pour in egg whites. Mix them around with a spatula until they're fully cooked scrambled eggs (about 2-5 minutes). Spread mustard on the bread and top with eggs (it's an open-faced sandwich). Add salt and pepper.

Make a smoothie by mixing banana, berries, and soy milk in a blender. Drink up.
