Eggless, Milkless, Butterless Cake

what you need
  • 2 cup water
  • 2/3 cup shortening
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp. cloves (scant)
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 2 cup raisins
  • 3 cup flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda, dissolved in 1/3 cup hot water
make it
Mix first 9 ingredients in large sauce pan and bring to a boil. Boil for 7-8 minutes. Cool.

Add flour, baking powder and baking soda mixture. Mix well.

Bake in a 9x13 pan 35 minutes at 350 degrees F or until a toothpick will come out clean.
Add mixed dried fruit and nuts for budget fruit cake.

This is a recipe given to me by Lillian Torbenson, she said she's had this recipe since the 1930's.

She also ices with chocolate frosting for her family. Does not have to be iced otherwise.

Rated  by tonz2 on 1/11/2004 Wonderfully moist, a bit chewy, and not too sweet. My favorite kind of cake. I only had 3/4 cup of raisins, so I made 1/2 the recipe and folded a small handful of coarsely chopped walnuts into the batter. I didn't frost it - it's good plain. Whipped topping would be nice on it. This recipe is already on a card in my recipe box at home. It's going to be baked a lot. :)
