Eggplant Pizza Shells

what you need
  • 1 small eggplant
  • 2 eggs
  • 1/2 cup Italian bread crumbs
  • 1/8 teaspoon salt
  • 1/2 cup oil
  • 1/2 cup Kraft Parmesan Cheese
  • Pizza toppings and cheese
make it
Slice eggplant thin and set aside. Beat eggs in a bowl and set aside. In a mixing bowl add bread crumbs and salt. Dip eggplant in eggs to cover, and then dip in bread crumbs.

Heat oil in frying pan. Add eggplant a few at a time turning when brown on each side. Drain on paper towel then sprinkle with parmesan cheese.

Add your favorite pizza toppings and cheese. Put on baking sheet. Bake 350 degrees F until hot or cheese has melted.
Notes
Do not add sauce on your shells because it will make them soft.
