Eileen's Fruit Salsa for Fish, Ham & Chicken

Makes: 3 cups Total Time: 30 min

what you need
  • 1/2 ripe papaya, cut into small chunks
  • 1 mango, cut into small chunks
  • 2-3 slices fresh pineapple, cut into small chunks
  • 1 scallion, cut into small pieces along with green stalks
  • 1 small clove of garlic, minced.
  • 1 fresh jalapeno (cut in half, remove seeds and white veins to remove heat)
  • Fresh cilantro to taste
  • Salt to taste
  • 1/2-1 fresh lime or lemon juice
  • 1-2 Tbsp. olive oil
make it
Put all salsa ingredients into a bowl (except lime/lemon juice and oil).

Add fresh lime or lemon juice squeezed over all and olive oil.
Notes
This is great with fish, ham or grilled chicken. Some friends have just eaten it like a dessert. So far everyone has loved it.
