English Muffin Bread for Toasting

what you need
  • 5 1/2 cups flour, divided
  • 2 pkg. active dry yeast
  • 3 Tbsp. sugar
  • 1/4 tsp. baking soda
  • 1/8 tsp. baking powder
  • 2 tsp. salt
  • 1 1/2 cups skim milk, lukewarm
  • 2 Tbsp. corn meal + additional for dusting pans
make it
Spray two loaf pans with non-stick spray. Dust with a little corn meal and set aside. Combine 3 cups flour, yeast, sugar, baking soda and baking powder, and salt in a large bowl. Mix well. Slowly add barely warm milk with mixer on low speed. Stir in remaining flour.

Place half of batter in each prepared pan. Sprinkle top with one Tbsp. corn meal. Cover pans with a pastry cloth or plastic wrap. Put in a warm place and let rise for 45 minutes.

Bake at 400 degrees F for 25 minutes or until top is lightly browned and loaves sound hollow when tapped. Cool in pans for 5 min. Remove loaves from pan and cool on wire racks.
