what you need
  • 6 to 8 medium-to-large-sized potatoes, pre-mashed, low-fat milk and salt whisked in to desired consistency and taste
  • Chipotle-White Cheddar Mashed Potatoes:
  • Prepared mashed potatoes
  • 1 cup grated white cheddar cheese, plus extra for garnish
  • 1-to-2 tsp. pureed chipotle chilies in adobe
  • Salt
  • Caramelized Shallot and Sage Mashed Potatoes:
  • Prepared mashed potatoes
  • 2 Tbsp. olive oil
  • 2 cups shallots, thinly sliced
  • 1 tsp. chopped fresh sage
  • 1 Tbsp. white balsamic vinegar
  • 2 tsp. sugar
  • Salt
  • Sour Cream-Horseradish Mashed Potatoes:
  • Prepared mashed potatoes, (omit the milk)
  • 1 cup sour cream
  • 1/3 cup chopped fresh chives, plus extra for garnish
  • 1/4 cup prepared horseradish
  • Salt
  • Saffron-Corn Mashed Potatoes:
  • Prepared mashed potatoes, (omit the milk)
  • 2 Tbsp. olive oil
  • 3/4 cup onion, finely chopped
  • 1 cup fresh corn kernels (cut from one ear of corn)
  • 4 garlic cloves, minced
  • 1/2 cup milk
  • 1/8 tsp. saffron threads
  • Salt

Chipotle-White Cheddar Mashed Potatoes:
Mash cheddar cheese into prepared mashed potatoes in a large bowl. Add pureed chipotle and mash in until just blended. Season with salt to taste. Transfer to serving bowl and sprinkle with remaining cheddar for garnish.

Caramelized-Shallot and Sage Mashed Potatoes:
Heat olive oil in a heavy medium skillet on high heat. Add shallots; sauté until tender, about 2 minutes. Reduce heat to medium-low; stir until shallots are golden, about 5 minutes more. Add sage, vinegar and sugar; stir until caramelized, about 2 minutes. Stir shallot-sage mixture into prepared mashed potatoes. Season with salt to taste.

Sour Cream-Horseradish Mashed Potatoes:
Whisk sour cream, chives and horseradish in medium bowl. Fold sour cream mixture into prepared mashed potatoes. Season with salt and sprinkle with remaining chives. Serve.

Saffron-Corn Mashed Potatoes:
Heat olive oil in heavy large skillet over medium-high heat. Add onion and sauté 2 minutes. Add corn and garlic. Cook until corn is soft, stirring often, about 4 minutes. Add milk and saffron threads. Bring just to a boil; remove from heat, cover, and let steep 10 minutes. Stir into prepared mashed potatoes. Season with salt taste.
