what you need
  • 2 cups flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 cups cooking oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups grated carrots
  • 1 small can crushed pineapple, drain juice
  • 3/4 cup chopped nuts
  • Icing:
  • 1 package (8 oz.) cream cheese
  • 1 box powdered sugar
  • 1 stick butter
  • 2 tsp. vanilla
make it
Sift all dry ingredients together except sugar and set aside. Mix oil, sugar and eggs, beating after each addition. Add dry ingredients. Mix well. Add carrots, pineapple, and nuts.

Grease and flour two 13x9x2 inch pans or 3 round cake pans.

Bake 30 to 35 minutes on 325 degrees.
Notes
Make 1 1/2 times icing.
