Explosive Ricotta and Spinach Chicken

what you need
  • 3 tablespoons olive oil, divided
  • 1 cup chopped portobello mushrooms
  • 1 package cleaned spinach
  • 15 ounces ricotta cheese
  • 1.5 pounds boneless skinless chicken breast
  • Seasoning salt (optional)
make it
Heat 1 tablespoon of olive oil over medium heat in skillet. Add mushroom and spinach, saute three minutes. Mix spinach and mushroom in medium bowl with ricotta cheese.

Clean chicken breast (removing any access fat). Sprinkle seasoning salt over chicken breast as desired (for flavor). Spread spinach, mushroom and ricotta cheese mixture over one side of chicken breast and fold chicken breast over cheese mixture.

In large non-stick skillet heat 2 tablespoons of olive oil over medium heat. Add chicken breast to skillet and cook until chicken is done.
Notes
Serve with flavored rice and veggies!

Rated  by mariejm on 9/15/2008 This was very very good. THe instructions were not too clear, like should I have cooked this covered? Should I have split each breast? I worked around this but next time I will improve this receipe. Cooking for 50 mins is ideal if you split the breast in two and use each side seperately, beat each breast with a mallet spoon in the mixture, and close with toothpick.
