Extra-Cheesy Potato Casserole

what you need
  • 1 can (10 3/4 oz.) cream of mushroom soup
  • 1 can (10 3/4 oz.) cheddar cheese soup
  • 1 container (16 oz.) sour cream
  • 1 tsp. ground red pepper
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 2 bags (8 oz. each) cheddar cheese (1 for mixing into potatoes and 1 for the top of the casserole)
  • 1 package (28 oz.) cubed potatoes
  • 1 bag (16 oz.) peppers and onions, cut into small pieces
make it
Preheat oven to 350 degrees F. Spray 13x9x2 pan with cooking spray. Combine soups, sour cream, spices, and 1 bag of cheddar cheese. Mix well. Add potatoes, onions and peppers and mix until combined.

Pour into sprayed 13x9x2 pan and then top with remaining cheddar cheese.

Bake until golden brown. Let stand for about 10 minutes as casserole will be very hot.
