Fiesta Chicken Pasta

what you need
  • 2 boneless skinless chicken breasts
  • Lemon pepper
  • Seasoning salt
  • 4 Tbsp. lemon juice
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 cup water
  • 2-3 cups pasta cooked (penne is best)
  • 1 small tomato, chopped
  • Sprinkle of cheese
make it
Preheat oven to 350°F. Season each side of chicken and then pour the lemon juice on each side.

Line a round cake pan with aluminum foil. Put half of the peppers on the bottom of the pan then lay the chicken breasts on top of the peppers. Pour the 1/4 cup of water into the bottom of the pan. Cover the chicken breasts with the rest of the peppers. Cover the round cake pan with aluminum foil. Put the chicken in the oven for 35-40 minutes.

When the chicken is done slice the chicken breasts and put them on top of the pasta with the peppers. Add the tomato pieces to the pasta. Top with a sprinkle of cheese and...ENJOY!!!
Notes
Olives may be a good addition as well.

It is easiest to have the pasta already on plates before putting each sliced chicken breast on top with the peppers.

Rated  by a cook on 11/27/2006 I thought it was great! I have a little guy allergic to cheese, so I added Kraft zesty italian dressing to his instead. It was really good. I will definately make again.
