Fish in a Boat

what you need
  • 2 fillets of fish (salmon is recommended), skinned de-boned and mud vein removed
  • 1 to 2 sticks butter, cut into small patties
  • 2 Tbsp. lemon juice
  • 1 Vandalia onion or sweet onion, diced
  • 1 container (12 oz.) French onion chip dip
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded taco flavored cheese
make it
Double up two sheets of heavy tin foil. Curl up the sides to make a boat-thus the name.

Put butter over the bottom of the boat. Place the fish filets over the butter. Put a bit more butter on top of the fish. Lightly dash with lemon juice. Cover fish with diced onions to your liking. Spread a thick layer of chip dip over the fillets. (I usually like the whole container.) Lastly add the cheese also to your liking.

Grill the boat for 30 minutes or until flakes easily and the cheese is melted.
