Fish & Rice Salad

what you need
  • 1 lb. fried Wahoo (fish)
  • 1/2 cup cooked white rice
  • 2 ripe tomatoes
  • 6 sweet pickles
  • 6 black and green olives
  • 4 stalks asparagus
  • 1 small bottle capers
  • Dressing:
  • 1 cup Kraft Zesty Italian Dressing
  • 1 teaspoon curry powder
  • 2 teaspoons Kraft Mayonnaise

Fry fish until cooked properly. Cook rice in water. Let stay until both are cool. While rice and fish are cooling, cut tomatoes in wedges, cut up sweet pickles and olives. Cut asparagus.

Once fish and rice are cool, cut the fish in small pieces. In a large bowl combine fish, tomatoes, pickles, olives, asparagus, capers, and rice.

Blend dressing ingredients together. Pour over salad when served.
Notes
Make sure both rice and fish are cool before preparing this recipe.
